Thyme honey is produced between the second half of June and the first half of July and is known for its aroma and flavour. The colour of Thyme Honey is light amber to brown. It is a very strong, intensely aromatic honey with resinous, spicy, savoury flavours; fresh and reminiscent of tropical fruits, dates and white pepper. The flavour is persistent and lingers in the mouth. It is slightly bitter in taste.
A Greek study states that thyme honey reduces the vitality of hormone-dependent cancer cells in the uterus and prostate. The researchers also suggest that a diet enriched with thyme honey may significantly reduce the risk of breast, prostate and uterine cancer.
